NON-STICK CERAMIC GREEN SKILLET (STA BREAKING NEWS and ARCHIVES)
I am now on my second ceramic skillet. I discovered that they need to be treated similar to cast iron in order to retain the slippery finish. For me, it works best to rinse the skillet with hot running water, then wipe with a paper towel. I also use only a silicone spatula for flipping and stirring the food.
The first ceramic skillet I owned lost its slippery finish in less than a year because I washed it by hand and a few times in the dishwasher. The ceramic coating even started to flake off in places (size of pin head). I always cook with fat (coconut oil) so the ceramic coating stays well lubed. All my other pots and pans are stainless steel. I gave up the Teflon stuff long ago. Cast iron is too heavy for me to safely handle.
