ONE POT CHILI

CHAZZZ'S ONE POT CHILI

1 large sweet onion, 2 pounds lean ground beef, 2 cans kidney beans, 1 large can crushed tomatoes, 1 small can tomato paste, 1/2 cup sweet wine, olive oil, 1/4 cup worcestershire sauce, chili powder to your taste.

Cut up one large sweet onion (or two small ones). Put onion pieces in large pot (I use our Dutch oven), add enough olive oil to dampen the onions, probably a few tablespoons. Sauté the onions over medium high heat with the lid on except to stir the onions periodically. Cook the onions in the oil until they go a kind of transparent light amber color.

When the onions are done add the ground beef. Break up the ground beef into the onions with a spoon or spatula. Brown the beef with the onions until it is a uniform brown over medium high heat. Use lean ground beef, don't drain the fat and juices - those are where the flavors are.

Add the worcestershire sauce, the wine, and the crushed tomatoes and tomato paste to the beef and onions. Stir well and change the heat to medium.

Open the cans of kidney beans into a colander. Thoroughly rinse the beans under warm water to get rid of the bean smell. Drain the beans and add them to the pot.

Add chili powder to your personal taste. Stir well. I prefer my chili mild so I use about two teaspoons of chili powder. If you want it more spicy add more chili powder or hot sauce. Let simmer as long as you want - or have a bowl immediately if you are hungry.
